Caramel Cranberry Sauce with Xylitol

1 cup cranberries
1/2 cup xylitol
2 tbs butter
2 tbs heavy cream

Heat xylitol over medium until it melts. Remove from heat and stir in butter until melted. Stir in heavy cream. Add cranberries and cook on low until berries are soft. Mash them with wooden spoon. Test for sweetness (warning! It’s hot!!!)

Cover and let rest while you prepare massive quantities of vegetables from your CSA. Allow to cool and taste again as you put it into the fridge. Try not to eat it all. Xylitol needs to be taken in moderation!
